Protein Oatmeal Chocolate Chip Cookies

It seems fitting for my first post to be about cookies because I LOVE sweets. My sweet tooth is most definitely something I get from my Dad. Cutting sweets out of my diet is just not possible for me, nor sustainable, so I try to find ways to make 'healthier' versions of my favorite treats.

For most recipes I weigh out the ingredients. I find this to help me know the exact measurements within. To make these cookies, you'll need the following ingredients:

  • 60 grams (1/4 cup) of Unsweetened Applesauce

  • 30 grams (1/4 cup) of Whey Protein

  • 1 tsp. Vanilla Extract

  • 1/4 tsp. Baking Powder

  • 1 Egg

  • 30 grams (1/3 cup) Quick Oats

  • 1 TBS Sugar Substitute (I used Swerve)

  • 14 grams (2 TBS) of Coconut Flour

  • 7 grams (2 TBS) of Mini Chocolate Chip

Making the cookies is actually very simple. You just want to combine all the ingredients, except the chocolate chips. Once everything is mixed, shape into 6 cookies and place onto a greased cookie sheet. Once the cookies are on the sheet, place the chocolate chips on the tops of each cookie, then cook at 350 degrees for 12 minutes, or until golden brown. Enjoy!

Nutrition/Macro Breakdown: 6 grams of Protein; 6 grams of Carbohydrates; 2 grams of Fat per 1 cookie.
